What is Passover?

Passover is a Jewish Holiday that commemorates the liberation of the Israelites in ancient Egypt. The word "Passover" comes from the Hebrew word "Pesach," which means "to pass over."

The holiday lasts for seven days. Many Jewish people gather for a seder on the first two nights of Passover to retell the story of the Israeli's exodus from Egypt by reading the Haggadah and enjoying many traditional foods.

What foods are eaten during Passover?

It is traditional to eat matzo (unleavened bread), which symbolizes the haste with which the Israelites fled Egypt.

Other Passover traditions include the prohibition of eating chametz (leavened bread). Some Jewish communities also prohibit kitniyot which includes legumes such as beans, peas, lentils, corn, and rice, as well as seeds.

My family personally eats Kitniyot during Passover, and I especially find it to be helpful when also following a vegan or plant-based diet! While some of the recipes below do include kitniyot, many can be easily adapted.
