I think it would be great for a picnic. Perhaps you could change out the greens and use arugula (uncooked) so you wouldn't have sad wilty wet greens. I think sauteed vegetables in one big container, ultimately used for the whole salad, greens in another and bacon, in yet another small container in a cooler would make for a great picnic salad that you could combine all right as you serve.

This turned out great! Was super easy and quick - perfect for a lazy (and affordable!) weeknight meal. My wife and I both thought subbing in a cajun marinated tofu might play well too, for all the veg heads out there. We also added a can of white beans for even more protein and depth. Served with bread and a simple salad.

Delicious and fast! Will do again and again. Used kale and cut off leftover corn on the cob. Needed a little garlic powder and salt and pepper and do sooooo good!

Will this work cold for a picnic? I don't see why not. Maybe reserve the crispy bacon to be put on at the time of serving... thoughts?

I have made this twice, the second time without the chard or kale. While I love leafy greens, the texture didn't work for me in this dish. I add pepper and carrot, and would throw in any other veggies I had in the fridge, except chard/kale/etc. With that change, this recipe is delicious! Per some other comments, I plan to try it with a can of white beans next time.

Delicious, easy, and perfect for using up swiss chard and kale from the garden. The writer is right---this recipe is versatile--you can substitute many other vegetables(I used zucchini and carrots) , and vary the amounts as well. The bacon makes it wonderful, but I suppose it would be fine without it for vegetarians.

superb. used 6 ears of corn and they yielded 4 cups. used a carrot AND the red pepper. used 1/2 a large sweet onion because i had one. used 6 slices of bacon (one for each ear of corn) and cooked the slices whole because they're easier to turn, then chopped/crumbled. used double the scallions. cooked the greens separately with minced garlic and a bit of the leftover bacon fat.

I substituted white beans for the corn ßß worked great and made a delicious protein rich one pot meal.

We just ate this for dinner and everyone liked it, which is kind of a miracle. I added garlic because I read one of the comments above recommending it, and I used carrots because I didn't have a red pepper.

This recipe is perfect as written. However, I had some leftover grilled shrimp which I added at the end and WOW!

Can’t imagine why garlic isn’t mentioned?! & obviously if fresh ( spicy-hot peppers of one kind or another are available..it’s a possibility against the pepper flakes ( not better, just nice to use if you have them fresh!) .So here’s a few further variations for my fellow Home Chefs!

Delicious, healthy, and easy! I actually like this better without the greens - they change the texture of the dish. I add bell pepper and carrot, and follow the rest of the recipe pretty closely.

great for fall

I made this with the leftover veggies in my crisper- kale, onion, sweet potato, carrot, and sweet baby peppers. Onion, carrot and sweet potato in first , then the kale, and then the peppers. Finished off with the bacon and it was wonderful. My 18 month old would still not eat it.

This was a super satisfying and tasty side dish. Loaded with an assortment of colorful veggies that add contrast to any plate. I enjoyed the simplicity of the ingredients and how quickly everything came together. This will definitely be a staple side dish recipe around the household, and makes me look forward to eating leftovers tomorrow!

Such a great recipe, very easy to modify. Any leafy greens would work. I actually threw in some zuchini and kalamata olives for variety. Love recipes that work well with what's in the fridge!

I had leftover corn on the cob from our Labor Day bbq and I hate wasting anything. This was a perfect next day meal for my husband and I. Served with a simple breakfast for dinner cheesy scrambled egg. Total yummy!

Used pancetta in place of bacon and collard greens which I cooked separately in olive oil and then added to other veges. Did not use shallots because of family diet limits. And it was amazing! Thought that adding sweet potato/yam chunks would be a worthwhile addition if desired. Served with grilled chicken and sliced tomatoes from the farmers market. Summer bliss.

This is so good! But what about this is fast? I feel like there are a lot of moving pieces and it's kind of a lot of work for a salad...although, it's mostly bacon with kale on the side, so I'm not complaining =)

Great Quick Meal

We had leftover cooked corn from Memorial Day which made this go even more quickly! Subbed a spring onion for the shallot bc that's what we had. Also browned off Costco hot links in the bacon before adding the onions. No added veg (just corn and kale) but it was a HUGE success. I'll be remembering this one.

This is a delicious and colorful side. Make extra because it is also wonderful for breakfast topped with a fried or poached egg. This dish also works well with turkey bacon.

Used malabar spinach with stems as the greens. Added 1/4 cup whole milk at the end, let it stew a few minutes then served with shrimp.

Doubled the bacon. Added jerk seasoning. Absolutely delicious. Will make again.

For 2 I used 3 strips bacon,1 shallot 2 ears of corn, handful of chopped baby carrots, 3 scallions and baby spinach. This was excellent and will repeat.

We all loved this. The corn we used was exceptionally sweet. The next night I served the leftovers with dinner, and found that it was actually better the second night. I didn’t use any greens, but added a jalapeño. I’m making it again very soon while corn’s in season.

I served this over some romaine, added some minced garlic. Next time I will add a slash of red wine vinegar. Delicious!
